It's blueberry season! My family and I made a trip today to our local blueberry u-pick farm where we picked pounds and pounds of fantastic sweet blueberries. When we came home, we made this easy blueberry crisp. It only took a few minutes to put together and went great with a scoop of vanilla ice cream.
Ingredients:5 cups of fresh blueberries
2 1/2 cups all-purpose flour
1 1/2 cups rolled oats
1 1/2 cups packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups of melted salted butter
Preheat oven to 350 degrees. In a large bowl, combine the melted butter with the flour, oats, brown sugar, cinnamon, and nutmeg. Press half of the crumb mix in the bottom of a 9x13 inch pan. Cover with the berries. Sprinkle the remaining crumb mix over the berries. Bake for approx. 35 minutes or until the fruit is bubbly and the top is slightly golden brown.
My blueberries were very sweet so I did not add any sugar to them. If your berries are more on the tart side or if you like your desserts pretty sweet, you may want to add a few tablespoons of sugar to your berries. I don't normally eat a lot of sugar, so I can really taste it when I cook with it.
