Purple Sweet Potato Pie



Have you had purple sweet potatoes? They are amazing tasting. If you can get your hands on some - DO IT!!!!  The lovely lavender shade they come in is completely natural. They have great flavor and make the prettiest sweet potato mash or sweet potato pie!  I got my sweet potatoes from Space Girl Organics. This is a super easy pie recipe!



Ingredients:
2 cups peeled and boiled purple sweet potatoes
3/4 cup sugar
4 tablespoons (this is a 1/2 stick) of melted butter
2 eggs
1 teaspoon vanilla
1/4 teaspoon sea salt
1/4 teaspoon ground cinnamon
1/4 teaspoon of nutmeg
1 cup milk (I used organic skim)
9-inch unbaked pie crust

Directions:
Preheat the oven to 350 degrees
Purple sweet potatoes have a but of a lower moisture content then regular sweet potatoes.  For making a pie, I boil my purple sweets (instead of roasting them) to keep them moist.
Use an food processor or high speed blender, combine the cooked potatoes (remove the skins), sugar, milk, butter, vanilla, salt, and spices. Mix very well to pulverize any potato fibers.  Briefly blend in the 2 eggs.  Pour the filling into the unbaked pie crust and bake for 40 minutes, or until the pie does not jiggle. Cool and serve.
