Easy Instant Pot Spanish Rice
This recipe will make about 6 cups of rice, plenty for 4 people.
Ingredients:
2 cups long grain rice
2 cups of chicken or vegetable stock or water
1 or 2 tablespoons of oil (depending on how oily you like you rice)
1/4 cup diced onion
1 cup tomato sauce or cantina style salsa (I use the Pace restaurant style brand)
salt to taste
Instructions:
Turn instant pot on Saute
Add oil, rice and onions and saute about 3 minutes or until light golden
Add in stock and salsa stir
Put on Instant Pot lid and close and cook on Manual High Pressure for 5 minutes
Once the Instant Pot beeps, let if sit for 4 additional minutes
Do a quick pressure release to release the remaining pressure. Remove the lid and stir and remove to a bowl.
